Beetroot and Mint Yogurt Dip

Beetroot Dip [1280x768]

– 1 450g Can of sliced beetroot
– 2 tbsp of chopped fresh mint leaf
– Juice of 1 lime
– 1 tsp fennel seed
– 3 tbsp Greek yogurt
– handful of chopped cashew nuts
– salt and pepper to taste

Blend everything in a blender and enjoy with bread, crackers or vegetable sticks =D
